Both pork and beef are good BBQ.

If you say one or the other is “not BBQ” or “not good” you are lying to yourself and others.

Good beef brisket is delicious. But most is overcooked/cooked too fast and is dry and tender as beef jerky.

I have only had good brisket in Kansas City and Mississippi of all places.

Ordering beef brisket at a restaurant is akin to Russian roulette.

Good BBQ is NOT overcooked. It's cooked just right...very slow. Overcooked meat is tough. Good BBQ is not.

Brisket wasn't considered a BBQ staple until relatively recently. Even in Texas, the cut of meat wasn't front and center on any BBQ menu until the 1950's.

The Jews own brisket. I love corned beef, I love pastrami, both come from the brisket cut.

Texas rednecks tried to take it back in the last few decades. It's a clown cut for BBQ.

Most places in Texas are still figuring out how to cook it apparently. Or they just don’t care.

Brisket and football are similar in Texas. They want to be good. They want to say they are the best. But results are always underwhelming.

BBQ of any meat is not overcooked, it's cooked to the temperature and pace needed to render down the tougher tissue, and soak up flavor.

Pretending it's a steak or something and claiming it's overcooked compared to that only shows an ignorance towards cooking meat in general.

this is a weak troll. do better if you want it to work.

Brisket and pork butt are cooked to similar temperatures, anyway. They're both low-and-slow cuts, and I think cooking tough and fatty cuts low and slow over smoke is the defining characteristic of American barbecue.

You need to consult with a LOT of barbecue joints in Texas. They are trying to pump out as many pounds as they can as fast as they can cook it.
