For me it was probably Ace Wright from AU. Blazing fast WR that ended winning Fastest Man in the NFL a couple of times in the early 90s

Curtis Dickey. World class sprinter.
I watched him stand at the 20 yard line going in attempt a halfback pass. When it wasn't open he decided to run it in. It was like he was moving and no one else was.

Randy Moss - 1997 Motor City Bowl.
First play from scrimmage absolutely torched our DB, who ran a 4.36 himself and was our fastest player, for a TD.

He was right up there with Herschel as far as being the fastest big guy.
I can go back even further.
Cliff Branch from Colorado ran 10.0 for 100 meters in 1972. He looked really fast on the football field too... because back then there was a a bunch of white dudes on the field trying to catch him.
Speaking of white dudes...
Richmond Flowers was a hurdler but was one of the fastest dudes in the world when he was at Tennessee.
For for Missouri people. Mel Gray... Dominated the NCAA sprints in the late '60s. Looked like a greyhound on the field.
What sucked for those guys back then....they had to give up sprinting if they wanted to play in the NFL.
Finally, on OJ. They had a receiver named Earl McCullough. OJ and Earl were two legs on USC's 4x100 meter relay. They were the world record holders at that time.

Pure unadulterated quickness, David "Deuce" Palmer.
Topside speed, Henry Ruggs

2021 SECCG - Jameson Williams took a 2nd quarter slant 70 yards and looked like a thoroughbred race horse. I knew he was fast, but it was jaw dropping to see live

This. When you watched how the corners would play him, they would back up farther and farther and change their angles, it just didn't matter. You just couldn't adjust for his speed.

Ted Gullette
Brian Cole (see the Sports Illustrated article titled “The Best Player You Never Saw.”
He was a two sport athlete in HS and at Meridian High was great FB player who had blazing speed. Chose to focus on baseball post-high school. I don’t want to spoil the story for you all but it is worth a read.
