I like brisket but it's part of a bbq not the main item like pulled pork is to me. My perfect plate is mustard base pulled pork with has and rice along with ribs and brisket but I would choose ribs before brisket

Several men came from South Carolina in 1836, thank you. So early on pork bbq was tried in Texas, but I guess the people preferred beef brisket.

And thank God for that. Otherwise I'd have a hankering for both beef barbecue and motherfricking cock, as best as I can tell. Fortunately where I grew up we like pussy and pork, in that order.

Texas has the best barbecue, but the Carolinas'pork is really tasty too. I like the east Carolina vinegar sauce and the South Carolina mustard sauce.

We don’t smoke loins

Shoulders and Butts Ribs

Some people may but tenderloin is dry not much fat on it

Sides is always slaw potato salad and baked beans

I also smoke chicken whole chicken or breast and legs

I use pecan and oak wood
