I used to take a hardline regarding my preferred regional style of BBQ.

But as I've gotten older, I've started to appreciate the different styles. I've even made a gasp honey jalapeno BBQ sauce for pulled pork before! The horror!

I thought the Texas Hill Country and Central Texas were the same thing.

But this list is seperating them.

You can't sling a dead cat in South Carolina, Georgia or North Carolina without hitting a gas station that sells better BBQ than all of the BBQ sold in all of Texas...gas station BBQ...go to an actual BBQ joint in any of the three and folks from Texas would go home and shut down their roast beef stand in embarrassment. BBQ is pork, period. Anything that is sold as BBQ that didn't come off a pig is counterfeit and a fraud.

Brisket is far better roast beef than pulled or chopped pork but the latter is actually BBQ while the former is actually roast beef. Any civilized person knows this thus the confusion in the lone star state...the only civilized folks there are from someplace else and ain't been brow beaten into thinking scorched roast beef doused in ketchup and served with pork and beans is BBQ.

They put ketchup on roast beef in Texas and call it BBQ. First they scorch and over cook the roast beef.

Where the hell in Texas would a gas station sell BBQ? That’s only Buckys. Everyone else just sells tacos. Easier to make. You have to go to rural Texas to find some BBQ gas station.

The best roast beef in the US is done in Southern California...they don't call it BBQ though, they actually call it brisket because even in California they know beef ain't BBQ.

I will tell anyone how I know this is so. I lived in Texas in the early 80s and you could not find a place that sold pork. It was all brisket and sausage. I lived in Georgia most of my life and you couldn't find a BBQ joint that sold beef. Pork, chopped then but sometimes pulled, was BBQ. Fast forward today I will guarantee you any restaurant in Texas that sells BBQ sells pork. I will also guarantee that any restaurant that sells BBQ that would be called a joint in the south will not sell brisket. If it has only been in business 20 years or so they may do so but they ain't a BBQ joint. Texas has changed in the last 40 years to the point where folks that sell what they call BBQ had to add pork to the menu or go out of business. Businesses in the south older than 20 years old have no reason to add anything to the menu because what they are selling is BBQ, not an smoked meats but actual BBQ that consists of a pig and a hickory tree. They also sell hash or Brunswick stew and not pork and beans and ketchup. They also have chips, light bread and bread and butter pickles or you can be an a-hole and get dill pickles. You will wash it down with sweet tea made by the hands of god fearing christian women...if you want a beer you will get the BBQ to go and get a beer elsewhere because they don't need to sell beer to sell their product...all they need is a pig and a hickory tree. These places have been around since before Texas was a state. The families that run them know the art of BBQ and a cow ain't even made a contribution let alone a commitment like a pig has....
