Pee Dee area BBQ - Red Gravy

Since its slow, somebody may can help me out.
I am looking for a recipe or path to create one for "Red Gravy".
The only area I have ever seen it, is Pee Dee (Florence) area BBQ resturants. Cain's, Woodys, Schoolhouse, Shulers, Rogers, Browns, etc...
Typically served over rice.
Hopefully someone that grew up or lives in area would know a recipe or about what would go in it. The best I have been able to do is a very thin BBQ sauce, but its no where close.

You talking about Eastern vinegar sauce, or does Florence have something specific that I'm not familiar with?

It might be. I'll have to look up some recipes.
Its not the BBQ sauce (vinegar, mustard, etc). When you order rice, you can get it with liver hash or Red gravy on top. I eat BBQ all over state, but seem to be only in PEE DEE area.

He must be referring to Red Eye Gravy, which has nothing to do with BBQ.
I'm originally from that area and don't know what Red Gravy related to BBQ is.

I considered that but red eye gravy is for breakfast haven't heard of it over rice thats why I thought maybe tomato gravy.
The only thing that goes over rice in South Carolina, when it comes to barbque is hash or Brunswick stew.

Yea too bad its gone. Doko Smoke, in Blythewood, is pretty good. Owner used to do barbecue competitions.

my grandad used to make it pretty regularly. that was a long time ago. have no idea about his recipe but he used to cut my arse as a young kid for messing with his bacon drippings.

Schoolhouse has the best red gravy in the area. It's generally thicker than the pepper vinegar sauce that you find at Scott's, Brown's or Big D's. I ate there this past Saturday.

This is it, somebody that has had it and I agree with you.
It's not BBQ sauce or tomato gravy, kind of a mixture of the two. Very unique.
Red Gravy is in a very small portion of SC. I love BBQ hash but nobody makes it in PEE DEE, it is liver hash.
Edit for background - I grew up in Florence, been gone for 20 years but I have always been on a quest to recreate my BBQ favorites. Pretty close on BBQ, this took a while. Slaw and chicken bog are pretty easy, but the Red Gravy eludes me.

When you say this, I know you're from Horry, Marion or Florence Counties. If you were from Georgetown, Williamsburg or Clarendon Counties, you'd call it perlo.
And as far as the red gravy, do you have family still in the Scranton area? I would imagine folks on that Hwy 52 corridor between Effingham and Cades would probably know how to make it. I can tell you now that the Schoolhouse version is a tad sweet, so there's some sugar in it.

I'm originally from that area, Lake City. Have been gone for over 40 years but visit frequently, mainly on holidays. I remember when the Schoolhouse opened in the 90's.
Not familiar with the Red Gravy by that name but will ask some folks around there. The Perlo name was used in the black community and the Bog was used in the white community. The product is the same though.

Interesting, I always thought it was a city vs country thing.
SC BBQ (general sense, all dishes) is so awesome. Whole state. I live 10 miles from SC but it could be a 1000 miles in the BBQ world. It took a couple of years for me to teach my company to only schedule SC jobs on Thursday and Friday.

I have family in Mullins and they day the red gravy is akin to tomato gravy. They eat it on biscuits or rice.
I only know chicken bog as that never heard it called perlo but I'm half cracker so maybe thats why.
People that live in the low country who do you think has the best Brunswick stew?
