Biased, but I'll nominate Dak. Put him on any Big 6 SEC team with the stats that he put up and he's a late 1st, early 2nd rounder.

I don't disagree with your second statement, but he was the First Team All-SEC QB two years in a row and got Heisman votes in 2014, so I have a hard time calling him underrated.
