In all honesty, I recommend you read Franklin's book. You'll learn how to do brisket.

Damn I can't believe I'm being the got dang voice of reason.

Look, good barbecue is good barbecue. I love eating it and I love making it. And in my opinion barbecue can be pork, beef, or chicken (my swamp chicken will make you slap your granny). As long as it is low, slow, and there's cold beer, you can turn about any damn thing into barbecue.

As far as the debate go, in my part of Florida, all you need is smoke, pepper, and Everglades seasoning (availiable at your local Publix). Pork is the norm. Swamp cabbage is a traditional side.

However, I like mustard based over tomato based any day. And I do love good brisket and consider that barbecue.

But I do have a real problem with you Texans and your "sides." WHY IN THE BLUE frick DONT YOU PEOPLE KNOW WHAT COLLARD GREENS ARE. HOW IN THE SAM HELL CAN YOU HAVE A BBQ JOINT AND NOT OFFER GREENS?!?!

because you said you said a butt was more forgiving because you could toss in a crock pot.

corned beef is just a brisket with pickle seasoning that you can easily toss in a crock pot.

there isn't really much of a difference between smoking the two because it comes down to the exact same things.

dry rub

to inject or not to inject

smoker itself, smoker temperature

wood choice

bark

internal temperature

And let your meat rest. --- this is the most common mistake people make. For brisket people are always in a hurry to get to the "burnt ends" they cut into the brisket and lose all the moisture.

I will give you this, it is more difficult to smoke a large cut of meat vs a smaller cut.

FTR, I believe whichever style tastes best to you, that is the best bbq.

For me personally, I prefer:

1) Memphis Style
2) Carolina Style
3) KC
4) Texas

But there are great bbq places in every state. Hell, one of the best I ever went to is in Southern Illinois.

It's all a matter of preference and I do love some greens but personally, I don't care for greens with my bbq. I prefer good greens with good fried catfish with a good cornbread dipped in the pot liquor, of course.

People act like TX isn't closely tied to a he South

I love country fri d steak, I learned in TX that what I REALLY love is chicken fried steak with white gravy

I even ask in restaurants now "is it a soggy hamburger patty or do you crispy fry it"

Please tell me where. Admittedly, I've never lived there. But I've been from to several barbecue joints in Texas from Jefferson to Lubbock and every time I've asked if they have greens they look at me like I have three eyes. I've known many other Texans in my life and I asked all of them, and none had even heard of greens before.
