Lots of things. Two moments come to mind somewhat recently where a feeling of true happiness came over me.
Last January while hunting, just as I got settled in a shooting house, a doe with a buck following her(start of the rut) came out into the field. Buck was too small to shoot so I just watched them interact for a good 20 minutes. It was one of those clear winter days without a cloud in the sky, about 55 degrees, with a light breeze. I was in a remote part of the hunting club's land and all you could hear was the wind in the leaves and the birds chirping. I hope I painted a picture as pretty as it truly was. Also I was high on pain pills because I had just had some dental work done the day before.
In early March, we had one of those early spring days, also not a cloud in the sky, high around 75, but the lows at night were still dipping into the 30's and 40's. That Saturday night, the wife, kids, and I sat in the backyard around the firepit in the backyard listening to Willie Nelson, roasting marshmallows, and talking. We probbably sat out there for 3 hours without any bickering between the kids, which is a record for those 2. Great night, and completely spontaneous.

I have a 3 month old that acts like Elvis walked in as soon as I get home.

Waking up with major wood. Makes my wife happy too.
BTW, no, I'm not kidding.

Money
Power
Owning nice things
Winning at everything. Losing at something ruins my day
Southern cooking
Bourbon
I would describe myself as materialistic and somewhat a narcissist. I have to have the best things, be the best over everyone else at what I do and be on top to be happy. I don't handle failure very well. Things like personal relationships and love affect me very little I can live with or without and be just as happy

Crushing my enemies

Laying in the bed with my wife watching tv, with her head on my chest.
Feeling my unborn son kick through her belly.
Swapping corps stories with my fish buddies, every year they get better.
Wilderness camping; the silent, crisp feelin of a march morning in the woods.
Playing grand strategy games with my brothers and dad, getting that total surprise of an attack they never suspect.

My two biggest things currently are:
Seeing one of my boys learn something new and being proud of it. Both have autism so displaying what they learn makes me very happy.
Smoking a bowl with the wife. She doesn't handle stress very well because of the boys are ultra hyper always. When we smoke in the evening, I keep her laughing. You can see that the stress has left her thanks to myself and the weed.

Been quite a few years since I've even seen one much less had one of those. Now I'll have the sads all day since I can't have one.
I've still randomly found them sometimes at mom and pop stores in the small towns.
You can order by the case online but it's spendy. There is not a non alcoholic drink better than nehi peach.

so the wife and i were in bed the other night talking about something and she told me for the first time she's down to party if it ever gets legal in TX or we're in CO. now i think she meant like pot brownies because the idea of smoking is evil to her, but i was flabbergasted that my granddaughter of a Southern Baptist Minister and mother of 2 boys on the PTA had swung that way.
tDecline is real and i think it's about to get freaky.

My wife is a speech pathologist and a lot of her clients are on the spectrum. It's good to hear that you care about your kids because so many nights she comes home with horror stories of parents who just don't care about their special needs kids. It takes a stronger person than me to de able to cope with thing a like that.
