Costa Rica is cool. Monkeys and shite. Puerto Rico is similar and easier.
For me and mine it would have to be tropical.
As far as the Ireland discussion goes, its a beautiful country filled with the nicest people in europe. If you do this trip you have to go to Scotland and Wales also. Does he golf? If so the oldest course in world is amazing to walk and take pictures. Cool experience.

He loves golf. That may have sealed the deal. 
I may can delay the trip a few months if it will be too cold.
