The concept that beef isn't BBQ is just laughable. BBQ is pork, beef, and chicken. If you go to Kentucky it is also mutton but that stuff isn't going to ever beat out pork or beef. If it is made of meat and smoked with indirect heat it is BBQ. The difficulty level of getting brisket properly cooked as compared to pulled pork is also huge but worth it.
The other test is BBQ is not great if it requires sauce or is overly sweet. Anyone can throw a sauce to cover up dry meat or they can put a ton of brown sugar on it to make it taste sweet. The meat must stand on its own and then you can add sauce as an enhancement if you like.
The best BBQ in the world is in Central Texas. You have places like Franklin's in Austin, Kreutz's, Smitty's, and Black's in Lockhart, City Market in Luling, Salt Lick in Driftwood, and my personal favorite Snow's in Lexington (which is only open on Saturdays). Best in CS is Fargos.
Personally though I love pulled pork and brisket. I agree most Texans don't appreciate proper pulled pork because it is hard to find here. This is some of mine though:

Great BBQ places also open with a big line and sell until it is gone. No time to "put out shite".

I like to see that you put cole slaw on your sammich. I grew up thinking that was standard, but you would be surprised at how many folks don't do that.

Martins in Bryan? Fargos moved in after I left and I haven't tried it but aside from the rant, I haven't heard any family or friends in BCS talk about it either.

Pulled pork is best with coleslaw imo, though it must stand on its own as well. My slaw has a Tex Mex flair with red onion, cilantro, and candied jalapeno and it isn't very sweet. I also like to go easy on my sauce if I use it at all. I prefer a mustard and vinegar based sauce but not too much of either.
For my brisket I like a sauce with some spice though but once again it needs to stand on its own.

Oklahoma Joe's in Kansas City, KS is probably the best BBQ I've eaten, and that includes some of the best places in Memphis (Rendezvous, Commisary, Corky's, etc.)

Austin is great because of Franklin, but he is originally from Bryan. There are some other good places here for sure but its really the surrounding area of Central Texas.

Cooper's is excellent and deserves mention. Never eaten at Martin's. Honestly if I eat BBQ in CS I usually just get a sliced beef sandwich at Koppe Bridge and tell them to make sure it is moist brisket. J Cody's also has respectable ribs, but not elite. Overall BCS has good but not great BBQ imo, I have sometimes thought I should open a place there.

Carolina BBQ. Period. If any of you go to the Masters in Augusta, Ga in the future, take a 45 minute drive to the other side of Aiken, SC and eat what I think is the best Carolina style bbq at Carolina BBQ.
