Was thinking about staying at Times Square but you hit the nail on the head in regards to food. I want a great steakhouse one night and probably find good American, French or Italian other nights. Gonna make the wife eat in delis for breakfast and lunch. (She's never been to NYC and I've only been a couple of times). If you have any favorites let me know. I'm not a big fan of seafood or most Asian cuisines, so that limits me quite a bit. I'm a steak and potatoes kind of guy.
Thinking about a bus tour one day, just to be able to hit so many areas, albeit lightly.
I do want a roadway show but will have to see what is playing in late July. I will also see if the Yankees are in town. I like museums, she's not a it fan of art though.

For steak, consider: Peter Luger, Keens, Benjamin Steak, Porter House
For delis, it really depends on where you are. NYC is chock full of good delis. The most famous, of course, is Katz's Deli (When Harry Met Sally). 2nd Ave Deli is also well known. But yeah I'd go with whatever is most convenient to your location at the time.
There are also a lot of bad or meh delis. Use Yelp.

Since it's only the two of you, and you won't mind a small room: I really like the Hudson. The location is really great (walk to Central Park and tons of other stuff).
Another route to investigate is Airbnb.com
Basically like VRBO, but shorter rentals. Some really great deals there if you don't mind staying in an apartment instead of a hotel.
