Because even though the McCarron hit was a hit on a defenseless player attempting to throw the ball, it wasn't as violent as the Murray hit. It comes across as a discrepancy in officiating because people think both hits are within the same circumstance.

Again, had the McCarron hit not been flagged, there wouldn't be such an outcry about the Murray hit IMO.

So, because people who don't know the rules see that Murray got hit hard, it should be flagged. Gotcha.

And people wonder why the country is going soft.
