When should we expect to hear on the rest of the open coaching positions? Next couple of weeks I'd expect right?

I am thinking once the NFL season winds down, and some of the bowl games played.

no clue. I'd imagine most of the spots will be filled by the end of the year. If they aren't filled by first of Jan, then the rest will be hired after NSD (like Thigpen from UNC).
A guy like Rocker wouldn't be available until 12/30, but I'd think it would be a week or two until we heard anything official... that's why I'm doubtful TR is coming back to AU. he may have serious interest, but the odds he'll still have NFL options available at the end of the year is high, IMO.
