No idea who the vergos family is but Aaron Franklin beats them and I'm sure it's not even close. Texas is better than Memphis every day of the week. Off all BBQ styles, Memphis has always been regarded as one of the biggest letdowns by people who have gone there.
I'm fascinated to hear about how we "slow cook" and don't BBQ by the experts here.

You talk an awful lot for knowing so little. The Vergos family runs the unanimous best BBQ restaurant in the world, Rendevous.
If you've never heard of it or the Vergos, then it doesn't matter what you say on here, because you have zero credibility on this subject.
I could put sauce on the sole of a tennis shoe and make it taste good. True BBQ doesn't use sauce.

I think BBQ is more than pork. Pig, chicken, turkey,and beef are all considered BBQ when slowly cooked cooked in a pit or smoker.
I like Texas BBQ. They take a brisket and turn it into a masterpiece. It's part of their heritage. Not my favorite, but good. I prefer pork.
I like Kansas City. They don't really have a particular style. They have vinegar, dryrub, sauced, and serve brisket.
I like NC's vinegar based on pulled pork only. I've had vinegar based ribs at BBQ fest in Memphis and haven't found some I like. Maybe they are out there, but I've yet to sample them.
Those and Memphis are regarded as the top BBQ areas. Alabama is coming on strong.
I love dry rub and no sauce. Others prefer sauce. You can have dry rub on brisket, chicken, pork, and turkey legs. So why should BBQ be regulated to only pork. The only reason we have BBQ is because one day someone felt creative and did something that others probably thought was crazy.

The day I take crap from people who sauce their meat and think pork is king is the day I sip pappy and coke and roll in pig shite.
As far as whatever the hell that place is, Aaron Franklin would have something to say about being the best. Many magazines have called him the #1 BBQ in the country and yahoo has his BBQ as one of the Top 20 restaurants in America. Never heard of him right? You just lost all credibility.

Beef is good. Pork is good. I'll eat whichever is done better by the individual who makes it. As for sauce, I prefer none. It covers the taste of the smoke and the meat, which is the point of BBQ in the first place. Some sauces exist that aren't that strong, and taste fine. But I've tasted more BBQ ruined by bad sauce than I've had BBQ that's made better by good sauce, so I tend to avoid it.

Um no Rendevous is about as overrated as they get, its good but no way its the unanimous best in the world.
The two best places for BBQ are NC and Texas then after that KC.

Here's all any of you need to know about BBQ.
Memphis is good, Texas is good, Kansas City is good, MS and AL are usually just as good if you go to the right place. The Carolinas are unique are very good. It's good with sauce. It's good without sauce. And no matter which one you are eating, just remember, it's still just BBQ. Who gives a shite? There you go, guys.
