I have spent a small fortune in the Houston and DFW areas trying to find this but have sadly not found it yet. Tough, dry, chewy, bland brisket is super easy to find though.

Pork is much more forgiving. It is a lot harder to get stuck with bad pork barbecue than it is bad beef barbecue.

It's Memphis. It's the only "city" that's known for BBQ in the south. Kansas City isn't in the the footprint, whatsoever.

So, I take in to account the give and take and don't try to rank them, I just say these places are good at bbq:

Memphis, KC, Lockhart, Llano, Decatur, AL, Georgia bbq is fractured around family lines so they are hit and miss good places, Mississippi and Arkansas Rural mom and pops can be very good and often have Fried Catfish on the menu which makes it tough....

Brunswick Stew is also in this category and I prefer the Georgia origin story...

Texas bbq to me is rooted in German immigration deli style while the south is more African in its Genesis. Both very, very good and done right are an event more than a meal.

Couple of other thoughts...

1. For all you teasips.... cow is no proper BBQ. While some brisket is edible, it is a poor substitute for the delicious pork. And all you KC folks, y'all can miss me with burnt ends. I just don't get it.

2. For any of you from South Arkansas, there used to be a grocery store on Hwy 24 northwest of Camden between Camden and Chidester called Harvey's. Harvey's was run by Bobby Hildebrand, and he smoked ribs on Saturdays. You would go up there and get a slab of ribs, half a loaf of Wonder bread, and a block of government cheese. And you'd sit at a long picnic table covered with white butcher paper in the back of the store and enjoy your lunch while the old timers talked politics or Razorbacks. You'd also sip on an ice cold Coca Cola in a glass bottle. Some of the best BBQ in the world in that place.

I an not talking Taco Hell or some chain.

I am talking real Mexican where lamb, offal, and organ meat are on the menu.

Years ago (and I assume they're still doing it although I've not been in a long time) there was a meat market called Bickelmeyer's in Kansas City. On Saturdays, a Mexican family would come in and set up a hot plate at the end of the counter and serve tacos - lamb, pork stomach, beef, etc. They were incredible. And you could then take home a dozen tamales in a bucket that they had made.

If you really want to try old style BBQ. I must suggest "Coopers". Where can you get BBQ'ed ribeye or BBQ'ed Goat? Coopers is in Mason Texas. All meat is cooked on a real grill outdoors, not some oven in a kitchen. You walk up to the pit railing and tell them what you want, and how much. If you ask nicely they will dunk your meat in a container of drippings for you. All sides are homemade and the beans are free.
