That may be true in Texas where "great" doesn't exist but it ain't so in Alabama, Georgia and South Carolina where almost every crossroad has some family with a block or a drum pit, a stack of hickory, access to pigs and the ability to smoke said pig steeped in their DNA who produce better BBQ than one can find anywhere. You can't sling a dead cat in most of those three states and not find better BBQ than anything west of the Sabine River. BBQ requires a commitment from a pig, a hickory tree and someone who knows what they are doing. If it ain't pig and it ain't hickory it ain't BBQ. It may very well be delicious....smoked turkey, chicken and fish is delicious, but it ain't BBQ.

The best way to judge a BBQ joint is to consider the sign. If there is a pig doing something pigs ought not be doing, dancing, fishing, playing checkers...that place may be righteous. There is a direct correlation between the level of anthropomorphic traits the pig on the sign of a BBQ Joint displays and the quality of the BBQ sold. To a lesser extent the number of pigs also indicates a higher degree of quality...if you find a place with 2 pigs, a male and a female pig dressed in square dancing clothes and cutting a jig you have likely found BBQ Nirvana. The science behind this is above reproach - it indicates a deep and meaningful connection to the star of the show at a BBQ joint....no one in their right mind would take the time and go to the expense of making a sign with 2 pigs dressed in overalls playing checkers on a wooden barrel in front of a general store and cut corners in preparing a pig for the table. The level of insanity required for such is beyond the ability of mankind.

This is incorrect. There may be some that have a couple/few locations that originated from one local restaurant, but no chains. Name the Nashville bbq places you’ve had. Are there touristy favorites around downtown, of course.
If anything, Nashville is an underrated BBQ town.

Memphis is probably #1. Tuscaloosa used to be way up there but I think the quality of Dreamland and Archibalds, while still good, is not what it used to be. I had some pretty good BBQ in South Carolina.
The consistently best bbq ive had lately is Back Beach BBQ in Panama City Beach

Kansas City's in Missouri, so this is part of the SEC footprint. I'd have to go with Memphis and Kansas City.....although the best BBQ I've ever had was in eastern North Carolina and in Georgia.

Texas, 1000%. This coming from a West TN guy. However, if you ever find yourself in Martin, TN, Blake's at Southern Milling has the best BBQ I've ever had and it's not close. He has Texas and Memphis style.. Best pimento cheese ever.. Just rediculously good. I've had Franklins, Blacks, Central, One and Only, all memphis bbq joints.. Nothing comes close.

I was in Lockhart just a month ago and tried each. Was travelling for work. Right down the road in Nixon, TX, theres a hole in the wall called Pioneer BBQ that is better than all of em. IMO

Drive through small towns in MS/AL/GA/AR/TN and there are still a lot of small town BBQ places that are damn good
