Have you tried the snapper throats? Been there a couple times for work dinners and I always get the sampler platter to get the most food. Definitely want to try the throats though because I have heard they are one of a kind

The snapper throats are legendary, but I am with you and usually go with the platter. I do the Texas Special which is snapper fillet, beef tenderloin, and lobster and crab au gratin. Woof.

We've always wet brined. It's always delicious, so I can't imagine changing. But I could try it on a chicken.

Yeah, I am actually a wet brine but mixing it up this year. I am still going to wet brine but I am going to let it dry up in the garage fridge for a couple of days so I can get the crispy skin.

Wet Brine Monday
Dry out Tue Wed
Spatchcock and smoke Thursday

Interestingly enough, I fractured my wrist a few months back and I needed two surguries (1st one was just get my wrist in place, they inserted pins and the 2nd was because of my Ulnar nerve). I still have swelling but the doctors said that there should be no more problems and it'll go away in a few months once my wrist is fully back in place.

Recovery is tough, but you'll get through it!

Good luck on your wrist. It really sucks to be limited on use of extremities to live your life.

I am glad I did it and getting back to some normalcy of life.

Work Monday, half day Tues, not sure of Wed. Lots of golf.

Hope you baws have a good one today. Enjoy your time with your family. Got my parents and my son down with our brand new granddaughter. Going to smoke my first turkey today. Have pizza guy on standby just in case.

Probably going to take my dad and two boys out 20 miles tomorrow to bottom fish. Weather is looking positive right now... My wife is glowing with having all the family down(mostly the new granddaughter) to our new home all at once.

My 21 year old son fell in the garage yesterday and hurt his wrist. It is all swollen... Just hoping I dont end up taking him to emergency care today. Hope its better when he wakes up. Never a dull moment.

I hope your son's wrist is fine and no trip needed to the ER. That is the last place I'd want to go today.

Just put the ham on the green egg & popped the bird in the oven. It's a smaller crowd for us this year w/ just my in-laws and wife's sister (no pics)& bro in-law. We had 19 last year and only 8 this year.

My oldest is sad, her first holiday alone. It's making mom sad too.

Thanksgiving is my favorite holiday. Feels a little muted this year without my normal peeps here.

Happy Thanksgiving Lanier. So glad you got family to come visit. Of course living in Florida is a huge draw for holiday visitors

Had a nice day ourselves - sister and her 3 sons, niece and her husband & baby. Sister-in-law bailed late, she was speaking with a recently widowed friend who was going to be alone today so she decided to take her out for dinner. We understood.

Settled in for the evening, watching the Egg Bowl, working up the energy to go mix myself a cocktail. Life is good.

Happy turkey day gents (and ladies if any still frequent this board). Very small group at our house, just me, the better half, the little one, my mom, and wife's best friend. Still did two turkey breasts - one in the oven, one in the smoker; two pans of dressing, one traditional, the other with Conecha sausage; deviled eggs, sweet potatoes, broccoli and cauliflower, green beans, rolls and two pies.

Sitting here watching Egg Bowland debating putting the tree up bare for a day or two to see if the little one tries to pull it over.

Skipping fishing today and taking him somewhere to get it checked out. He is not going to be happy with me. It doesnt look good and I want it looked at

Great day yesterday. Just hope he gets taken care of today and we can try again tomorrow.

Sorry to hear about the wrist...and looks like I missed your post about the Mini...I am looking for something that I can put a hitch on so I can carry my bike rack...They are fun to drive but your are correct about upkeep costs...Not fun there..
